Picnic or Barbecue Recipes
I'm getting ready to go on a vacation, but before I leave I wanted to call for everyone to post their picnic or barbecue recipes.

Mexican Lasagna
Mexican Lasagna
I got this recipe from my sister-in-law's favorite recipe web site: mynextrecipe.com I love that it doesn't have meat since we try to limit our red meat consumption.
Serves 8
1 medium onion, diced
1 green or red bell pepper
1-2 tablespoon oil
1 teaspoon dried oregano leaves
1 can kidney beans, drained and rinsed
1 can corn, drained
1 can (4 ounces each) chopped green chilies
1 can (4 ounces each) chopped olives
1 can enchilada sauce
½-1 teaspoon sugar
Salt and Pepper to taste
8 Corn tortillas or flour tortillas
Cheese
Directions
1. Wash hands.
2. Sauté onion and green bell pepper in oil for 2 to 3 minute. Add remaining ingredients to the onion mixture.
3. Spray an 8x11 pan with non-stick spray. Put tortillas on the bottom of a pan put ½ mixture then cheese. Repeat layers (tortillas, mixture and cheese). Top with cheese. Bake at 375°F for 25 minutes
Options:
Add refried beans, black beans, and/or cooked super lean ground beef
Reduce amount of cheese by only topping the lasagna with cheese instead of layering cheese throughout.
Use whole wheat tortillas

"Mrs. Field's" Chocolate Chip Cookies
My Mom made these all the time when we were growing up. The batch is HUGE, and they are very rich. I like to add a little whole wheat flour or spelt so that I don't feel so guilty, but it's probably futile. My grandma liked to put half the chocolate chips in them. She was trying to save money, but my Mom thought it was a sacrilege.
1lb. butter
1 1/2 c. sugar
2 c. brown sugar
3 eggs
6 c. white flour
1 1/2 tsp. salt
1 1/2 tsp. baking soda
2 tsp. real vanilla or 4 tsp. imitation vanilla
4 c. chocolate chips
Beat butter and sugars for 10 minutes. Add 3 eggs and beat 3 minutes. Add flour, salt, soda, and vanilla. Beat 3 more minutes. Add chocolate chips. Form into teaspoon size balls and bake at 350 degrees for 7-10 minutes.
